Gladys Bethancourt
Committed vegan runner, former operations director of a chain of bakeries and restaurants, I inspire through endurance, resilience, and human leadership in service of meaningful projects.
Vegan runner and creator of the Paris–Brest running project, I embody a unique approach that combines athletic performance, mental resilience, ethical commitment, and management expertise. As a former operations director in the bakery and restaurant sector, I led teams, developed sales points, and optimized KPIs while giving meaning to organizations. Today, I intervene around four complementary axes: The story of my Paris–Brest running adventure, a human journey that reveals the power of surpassing oneself. Long-distance performance, where I explore the levers of resilience, mental strength, and discipline — viewed through the lens of my vegan lifestyle. Militant engagement, to understand how to act, convince, and inspire without opposition, using running as a vector for encounters and transformation. Operational leadership, drawn from my experience as an operations director: management, KPI management, team alignment, and sustainable performance. My interventions blend authenticity, energy, pedagogy, and depth, with a guiding principle: to show that everyone can combine ambition, positive impact, and fidelity to their values — at their own pace, but never giving up.

How to Have a Profitable Business While Being Useful to the Animal Cause
This conference is aimed at anyone who wishes to reconcile ethical commitment and entrepreneurship. Through the example of food businesses (restaurants, bakeries, caterers, etc.), we will explore how to create an economically viable activity while serving the animal cause. We will begin by defining what a food business is today, and how it can become a lever for transforming consumption habits. Then, we will detail the major steps to open such a business: from the idea to market research, from financing to regulations, including the choice of suppliers and the creation of a 100% plant-based offer. The third part of the conference will focus on profitability: how to find a balance between fair pricing, accessibility, remuneration, and impact. We will address concrete questions about margins, business models, and communication strategies. Finally, we will open a broader reflection: how to stay aligned with personal convictions while meeting the demands of the entrepreneurial world? Is it possible to build a committed professional project that is meaningful and financially stable? Spoiler: yes — and this conference will show you how.
